Cheese Spoon Bread
Cheese Spoon Bread is an moderately easy dinner. Made with 2 c. milk, 1 c. cornmeal, 1/4 c. butter, softened, 1/2 c. (2 oz.) shredded mild cheddar cheese and 4 eggs, separated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Place milk in top of a double boiler over boiling water; cook until hot.
Stir in cornmeal; cook stirring until thickened. Remove from heat; stir in butter, cheese, yolks and salt.
Stir until cheese melts.
Beat egg whites at room temperature until stiff peaks form; fold into cornmeal mixture.
Pour into greased 2-quart casserole; bake at 350Β° for 30 to 35 minutes or until puffed and browned.
Serve immediately.
