Cheese Soufflé
Cheese Soufflé is an moderately easy dinner. Made with 1/4 c. butter, 1/4 c. flour, 1 c. milk, 1 c. cheddar cheese and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Melt butter.
Stir in flour.
Gradually add milk, stirring continually until mixture thickens.
Add cheese and seasonings. Stir until cheese is melted.
Remove from fire and slowly add egg yolks.
Fold in stiffly beaten egg whites.
Pour in a baking dish. Place dish in pan of hot water and bake 1 hour in a moderate 350° oven.
When brown and firm, remove from oven and serve.
