Cheese-Rice Casserole(Like A Soufflé) is an moderately easy dinner. Made with 1/2 c. grated cheddar cheese, 1/4 stick oleo, 1/8 c. (2 tbsp.) flour, 3/4 tsp. salt and 1/2 c. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Melt oleo over medium heat.
Add flour and salt.
Stir until smooth and cook 3 minutes.
Remove from heat and gradually add milk, stirring constantly.
Cook until thickened and add cheese. Beat egg yolks until thick.
Beat egg whites until stiff.
Add 1/8 cup sauce to yolks and mix.
Then add into sauce and add rice and egg whites.
Pour into 1-quart casserole. Bake over hot water at 325° for 1 hour.
May serve with tomato or cheese sauce.
