Cheese 'n Spinach Casserole
Cheese 'N Spinach Casserole is an moderately easy dinner. Made with 1 (12 oz.) pkg. wide egg noodles (uncooked), 2 c. cottage or ricotta cheese, 2 c. shredded cheddar (8 oz.), 1 1/4 c. frozen chopped spinach, thawed and well drained (10 oz. pkg.) and 3 eggs, this recipe delivers authentic, satisfying flavors. Cook noodles according to directions for 3 minutes.
Drain. Meanwhile, in large bowl, combine cheeses, spinach and eggs. Combine cooked noodles with 2 1/2 cups sauce; place half in a 3-quart casserole.
Top noodle mixture with cheese mixture, then remaining noodles and sauce.
Sprinkle with Parmesan cheese, if desired.
Cover and bake at 350Β° for 30 to 35 minutes or until hot and bubbly.
