Cauliflower Cheese Soup
Cauliflower Cheese Soup is an moderately easy dinner. Made with 2 tbsp. minced onion, 1/4 c. butter, 1/4 c. finely chopped celery, 2 c. water and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion and celery in butter for 5 minutes.
Add water and seasoning.
Bring to boil.
Meanwhile, cook the cauliflower in pan or microwave.
Add milk and cheese to boiling mixture.
Reduce heat.
When cauliflower is done, drain and chop.
Add to soup. Heat and serve.
May be made with broccoli or California vegetables.
Makes approximately 6 to 8 servings.
