Carrot Soufflé
Carrot Soufflé is an moderately easy dinner. Made with 1 lb. carrots, sliced, salt, 1/2 c. butter, melted, 1 c. sugar and 3 tbsp. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook the carrots until tender in salted water; drain.
Add the butter and mash the mixture (easier to mash in a blender or food processor).
Mix together the sugar, flour, baking powder, vanilla and eggs.
Add to the carrots and blend well.
Pour into greased 1-quart casserole and bake at 350° for 45 minutes.
Serves 4 to 6.
