Carrot-Pineapple Salad
Carrot-Pineapple Salad is an moderately easy dinner. Made with 1 envelope unflavored gelatin, 1/2 tsp. grated orange rind, 1 (6 oz.) can frozen orange juice concentrate, thawed and undiluted, 1 (8 oz.) can unsweetened crushed pineapple (undrained) and 1/2 c. raisins, this recipe delivers authentic, satisfying flavors. Sprinkle gelatin over water in a small saucepan; let stand 1 minute.
Cook over medium heat until gelatin dissolves, stirring constantly.
Remove from heat.
Stir in orange rind and orange juice concentrate.
Chill until the consistency of unbeaten egg white.
Fold in pineapple, raisins and carrots.
Cover and chill until firm.
