Carrot Fruitcake
Carrot Fruitcake is an impressive dinner. Made with 1 1/2 c. chopped nuts, 1 c. chopped dates, 3 c. all-purpose flour, divided, 1 1/2 c. vegetable oil and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine nuts, fruit, dates and raisins with 1/2 cup flour. Set aside.
In a large bowl, combine sugar and oil.
Mix well. Add eggs, one at a time, beating well after each addition. Combine baking powder, baking soda, cinnamon, salt and remaining flour.
Gradually add to sugar mixture.
Spoon into a greased and floured 10-inch tube pan.
Bake at 350Β° for 1 hour and 20 minutes or until cake tests done.
Cool for 15 minutes before removing from pan to cool on a wire rack.
If desired, drizzle with confectioners sugar icing when cooled.
Yields 12 to 16 servings.
