Carrot Cookies
Carrot Cookies is an impressive dinner. Made with 1/3 c. shortening, 1/3 c. sugar, 1/2 c. unsulphured molasses, 1 egg and 1/4 c. nonfat skim milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cream together the shortening, sugar, unsulphured molasses and egg.
Sift together nonfat skim milk, flour, spices, salt, soda and baking powder; stir into the creamed mixture.
Add grated carrots, raisins and rolled oats; mix well.
Drop by level tablespoons on a lightly greased cookie sheet.
Bake at 400Β° for about 10 minutes.
Makes about 6 dozen.
