Carrot Casserole
Carrot Casserole is an moderately easy dinner. Made with 1 lb. fresh baby carrots, 1 tbsp. horseradish (can add as much as 4 tbsp. depending on your taste), 1 tbsp. minced onion, 1/2 c. melted margarine and parsley, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook carrots (not too hard) and save 1/4 cup carrot liquid. Place carrots in a casserole dish.
Mix together carrot liquid, onion, margarine and horseradish.
Pour mixture over carrots. Stir fresh parsley through carrots and mix all together.
Saute cracker crumbs lightly.
Top carrots with cracker crumbs. Sprinkle with paprika.
Cook at 350Β° for 1/2 hour.
Do not cover.
