Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 1 1/2 c. vegetable oil, 2 c. sugar, 4 eggs, 2 c. flour and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Beat eggs thoroughly.
Add sugar.
Beat well.
Add oil and continue beating.
Add vanilla.
Sift together the flour, baking powder, soda, cinnamon and salt.
Add to egg mixture when thoroughly blended.
With a spatula or spoon, stir in the carrots, nutmeats and dates.
Bake at 350Β° for 45 to 60 minutes in a 9 x 13-inch cake pan.
Can also bake in a 16 x 10 1/2-inch pan.
Frost cake when cool.
