Carrot Cake
A spiced, oil-based carrot cake with raisins and walnuts folded in for old-fashioned heft. Cinnamon and freshly grated carrots keep every slice moist and warmly sweet.

π¨βπ³ Instructions
Grease and lightly flour pan.
In large mixing bowl, stir together flour, sugar, baking powder, baking soda, salt and cinnamon; add carrots, oil and eggs.
Mix until moistened.
Beat at medium speed for 2 minutes.
Pour into pan and bake at 325Β° for 50 to 60 minutes or until toothpick comes out clean.
Cool before adding frosting.
