Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 1 1/2 c. wesson oil, 2 c. sugar, 3 eggs, 2 tsp. vanilla and 2 c. sifted all-purpose flour, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Combine oil, sugar, eggs and vanilla in large bowl; beat vigorously with a spoon or electric mixer at medium speed until smooth.
Sift together the flour, cinnamon, baking soda and salt. Add dry ingredients to oil mixture, mixing well.
Stir in coconut, carrots, pineapple and nuts.
Pour batter into greased and floured 13 x 9 x 2-inch baking pan.
Bake in a 350Β° oven for 50 to 60 minutes, or until center of cake is firm to touch.
Cool in pan on rack.
