Caramel Peanut Balls
Caramel Peanut Balls is an easy dinner. Made with 3 c. finely chopped dry roasted peanuts, 1 (14 oz.) can eagle brand sweetened condensed milk (not evaporated milk), 1 tsp. vanilla extract and 1/2 lb. chocolate confectioners coating *, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In heavy saucepan, combine nuts, sweetened condensed milk and vanilla. Over medium heat, cook and stir 8 to 10 minutes or until mixture forms ball around spoon and pulls away from side of pan. Cool 10 minutes. Chill if desired.
Shape into 1-inch balls.
In small heavy saucepan, over low heat, melt confectioners coating. With wooden pick, dip each ball into melted coating, covering half of ball. Place on wax paper-lined baking sheets until firm.
Store covered at room temperature or in refrigerator.
Makes about 4 1/2 dozen.
