Caramel Fudge
Caramel Fudge is an moderately easy dinner. Made with 5 c. sugar, 2 c. cream, 1/2 c. milk, 1/2 stick butter (margarine) and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Put 4 cups sugar, the cream and butter on slow fire.
While this is cooking, put the remaining cup of sugar in a skillet and caramelize over a slow fire.
When the mixture comes to a boil, add the burnt sugar and milk to it.
Cook until it reaches a soft ball when tested in cold water.
(Cook long enough.)
Let cool, then add vanilla.
Beat until thick, add nuts and marshmallows.
Pour into a buttered dish.
Cut when cool into about 3 dozen pieces.
I use the small marshmallows.
