Caramel Corn
Caramel Corn is an moderately easy dinner. Made with 4 qt. freshly popped corn, 2 c. firmly packed brown sugar, 1 c. margarine, 1 c. light or dark corn syrup and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 250°.
Cook sugar, margarine, corn syrup and salt in saucepan, stirring constantly, until it bubbles.
Cook for 5 minutes without stirring.
Remove from heat; add soda and vanilla.
Place corn in a large roaster pan.
Pour syrup over and stir well.
Place in oven at 250° for 1 hour.
Stir 2 or 3 times during baking.
Remove from oven and cool.
Separate while cooling.
Many servings.
