Caramel Corn
Caramel Corn is an moderately easy dinner. Made with 5 qt. popped corn (2 or 3 bags microwave corn), 2 c. packed brown sugar, 1 c. butter or margarine, 1/2 c. light corn syrup and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Spread the popcorn on baking sheets and set aside.
In a large saucepan, combine brown sugar, butter and corn syrup.
Boil for 5 minutes and remove from heat.
Add baking soda, vanilla and salt. Stir thoroughly.
The mixture will "foam."
Pour over popped corn and mix well.
Bake in a 250Β° oven for 40 minutes.
Stir every 15 minutes to coat popped corn.
