Cape Cod Cranberry Meat Loaf
Cape Cod Cranberry Meat Loaf is an impressive dinner. Made with 3/4 c. whole berry cranberry sauce, 3/4 c. dark brown sugar, 1 lb. ground chuck, 1 lb. ground veal and 1/2 lb. ground pork, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Preheat oven to 350Β°.
Combine cranberry sauce and brown sugar in the bottom of a 9 x 5 x 3-inch loaf pan.
Combine remaining ingredients, except for the bay leaves, and mix well.
Shape into a loaf and place over sauce.
Top with bay leaves and bake 1 1/4 hours.
Remove bay leaves before removing to a warmed platter. Drizzle pan juices, especially the cranberries, over the loaf before serving.
Serves 4 to 6 generously.
