Canned Cucumber Relish
Canned Cucumber Relish is an moderately easy dinner. Made with 10 to 12 large cucumbers, 2 lb. onion, 3 c. celery, 2 hot peppers and 2 sweet peppers, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Slice unpeeled cucumbers and dice other vegetables.
Place in large canning pot and cover with salt and water.
Soak 12 hours. When time has passed, heat vinegar, sugar and spices.
Drain water off vegetables and add hot vinegar mixture.
Bring to a boil, approximately 10 minutes or until mixture is well heated. Transfer to hot canning jars and seal with hot disks and rings.
