Campfire Potatoes
Campfire Potatoes is an moderately easy dinner. Made with 5 medium potatoes, peeled and thinly sliced, 1 medium onion, sliced, 6 tbsp. butter or margarine, 1/3 c. shredded cheddar cheese and 2 tbsp. minced fresh parsley, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Place the potatoes and onion on a large piece of heavy-duty foil (about 20 x 20-inches); dot with butter.
Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes.
Fold foil up around potatoes and add broth.
Seal the edges of foil well.
Grill, covered, over medium coals, for 35 to 40 minutes or until potatoes are tender.
Yields 4 to 6 servings.
