Cajun Chicken Vegetable Soup
Cajun Chicken Vegetable Soup is an impressive dinner. Made with 3 to 4 tbsp. butter, 2 c. diced carrots, 1 c. diced onion, 1 c. diced green pepper and 3 stalks diced celery, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Melt butter in a large pot or soup kettle.
Add vegetables, spices and seasonings.
Saute 4 or 5 minutes.
Add chicken broth. Bring to a boil and cook 10 minutes.
Add tomato juice and V-8 juice.
Bring to a boil.
Add rice and cook until rice is tender, about 20 minutes.
Add chicken and shrimp.
Serve.
Makes 10 cups.
