Butterscotch Pudding
Butterscotch Pudding is an moderately easy dinner. Made with 3/4 c. brown sugar, 2 tbsp. cornstarch, 1/4 tsp. salt, 2 c. milk and 2 slightly beaten egg yolks or 1 beaten egg, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In saucepan blend sugar, cornstarch and salt; add milk.
Cook over medium heat, stirring constantly, until thickened and bubbly. Cook and stir 2 minutes more.
Remove from heat.
Stir small amount of hot mixture into beaten egg or yolks.
Return to hot mixture.
Cook, stirring constantly, for 2 minutes.
Remove from heat.
Add margarine and vanilla.
Pour into pudding dishes and chill.
Makes 4 servings.
