Brunswick Stew
Brunswick Stew is an moderately easy soup you can prepare in about 1 hour 12 minutes. Made with boston butt, c. broth, irish potatoes, medium onion, chopped and tomatoes, diced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cook Boston butt in crock-pot for about 4 1/2 hours on high until tender.
After it cooks, trim off fat.
Cut in chunks and put in food grinder.
Use 1 cup of stock and cut up potatoes, chopped onion and a little more water to cover potatoes.
Cook until tender but not mushy.
To this, add meat, tomatoes, corn, hot sauce, salt and pepper.
Cover and simmer for a while.
