Brunch Muffins
Brunch Muffins is an moderately easy dinner. Made with 1 egg, beaten, 3/4 c. milk, 1/4 c. vegetable oil or 1/4 c. applesauce, 1 1/2 c. raisin bran and 1 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 400Β°.
Grease or paper line 12 muffin cups. In a medium bowl, combine egg, milk and oil.
Stir in cereal.
Let stand 10 minutes.
In a large bowl, combine flour, sugar, baking powder, salt and cinnamon. Add cereal mixture all at once to flour mixture, stirring just until moistened.
Divide evenly among muffin cups.
Bake 20 to 25 minutes.
