Browned Rice Pilaf
Browned Rice Pilaf is an moderately easy dinner. Made with 1/4 c. uncooked long grain rice, 1 small clove garlic, minced, 1/8 tsp. dried whole oregano, 1/8 tsp. dried whole thyme and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Coat a medium saucepan with cooking spray; place over medium heat until hot.
Add rice and garlic; saute 3 minutes or until rice is lightly browned, stirring often.
Add oregano and next three ingredients; stir well.
Cover, reduce heat and simmer 15 minutes.
Add carrots and red pepper; toss gently.
Cover and cook an additional 5 minutes or until liquid is absorbed and rice is tender.
