Broccoli Soufflé
Broccoli Soufflé is an moderately easy dinner. Made with 1/2 c. onion, chopped, 6 tbsp. fresh bread crumbs, dash of salt, 1 (10 oz.) pkg. frozen broccoli, cooked and 1/4 c. bacon fat, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute onion in bacon fat.
Remove from heat; add bread crumbs, milk, salt, chicken broth and broccoli.
Mix well.
Beat 2 egg yolks until creamy and thick; combine with broccoli mixture.
Beat 4 egg whites until stiff, but not dry; fold in.
Pour into greased 1 quart casserole dish.
Set in hot water and bake at 325° for about 1 hour.
