Broccoli Casserole
Broccoli Casserole is an moderately easy dinner. Made with 2 (10 oz.) pkg. broccoli (tops only or buy florets), 1/2 can concentrated cream of mushroom soup, 1/2 c. mayonnaise, 1 egg, well beaten and 1/2 c. grated sharp cheddar cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook broccoli until almost tender (about 10 minutes); drain well.
Cut off tops, leaving a small stem (or buy florets). Combine concentrated soup, mayonnaise, beaten egg, cheese, onion, salt and pepper; mix well.
Add broccoli; spoon into lightly greased baking dish.
Sprinkle with crushed, buttered Ritz crackers.
Bake for 30 minutes at 350Β°.
Serves 4 to 6 people.
