Brandied Yam Bake
Brandied Yam Bake is an moderately easy dinner. Made with 1 20-oz. can pineapple, 3 lbs. yams, cooked and peeled, 1/2 c. butter, 1 c. brown sugar, firmly packed and 1/4 c. brandy, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Drain the pineapple and set aside.
Cut the yams into chunks. Melt the butter in a large skillet and add the brown sugar, brandy, cinnamon, nutmeg and salt.
Cook on high heat 3-4 minutes to reduce liquid to a syrup.
Add the yams and cook until glazed. Spoon into a 3-qt. casserole and arrange the pineapple and walnuts on the top.
Pour any remaining syrup over the top.
Bake at 375Β° for 15 minutes.
Yields 4-6 servings.
