Brandied Peaches
Brandied Peaches is an moderately easy dinner. Made with 4 lb. peaches, cloves, 4 lb. sugar, 3 1/2 c. water and 1 egg white, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Pare peaches.
Insert 2 cloves in each whole peach.
Make a syrup of the sugar and water.
Add egg white, beaten to a froth. Skim.
Add fruit, 1 layer at a time, and boil 5 minutes or until thickened.
Remove from heat.
Add brandy and pour over fruit in jars.
Seal at once in sterilized jars.
Makes 5 pints.
