Bran Muffins
Bran Muffins is an impressive dinner. Made with 2 eggs, 1 1/2 to 2 c. buttermilk (i use sweet milk, plus 1 to 2 tsp. vinegar), 1/4 c. oil, 1 c. raw miller oat bran and 2 c. whole wheat flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Let oat bran soak in liquid ingredients for 5 minutes.
In another bowl, combine all dry ingredients, nuts and dates, then mix in liquid lightly.
Bake in greased (or sprayed with Pam) muffin tins in a 400Β° oven for 20 to 25 minutes.
