Bran Muffins
Bran Muffins is an moderately easy dinner. Made with 6 c. bran, 2 c. boiling water, 1 c. melted shortening or oil, 3 c. sugar and 4 eggs, beaten, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Pour the boiling water over 2 cups bran and let stand while assembling other ingredients.
Add shortening to the soaked bran, then add the rest of the bran, sugar, eggs and buttermilk.
Sift flour, soda and salt and add to the bran mixture.
Mix well.
Bake as needed in 400Β° oven for 20 minutes.
Batter keeps in refrigerator up to 6 weeks.
Makes 5 to 6 dozen muffins.
