Pick over beans; discard any imperfect ones.
Rinse well; place beans in a bowl.
Cover with cold water.
Soak overnight; drain.
Cover with water; bring to a boil.
Lower heat; simmer until skins split when blown upon.
Drain.
Pour into bean pot. Stir salt, mustard, ginger, molasses, brown sugar and maple syrup together with some boiling water; pour over beans.
Peel and push onion into center of bean pot.
Cube salt pork; place on top of beans.
Add enough hot water to cover beans.
Cover bean pot. Bake for 8 hours in a 250° oven.
Add hot water (if needed) to keep beans covered.
During the last hour of cooking, remove cover and increase temperature to 300°.
