Flatten breasts; set aside.
In three shallow bowls, put flour and nutmeg in one, eggs in one and bread crumbs and Parmesan in one.
Dip breasts in flour mixture first, then into the eggs, then into the bread crumb mixture.
Fry in oil, butter or margarine, very slowly, until brown on both sides.
Place in baking pan.
Add water.
Cover with foil.
Bake at 350Β° for 45 minutes.
