Blintzes
Blintzes is an moderately easy dinner. Made with 1 1/2 c. milk, 1 1/2 c. flour, 3 tbsp. butter or oil, 3 eggs and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a bowl with a whisk beat milk, flour and oil until smooth. Add eggs one at a time while beating; add sugar and vanilla.
Beat well. heat a heavy 7-inch skillet until drop of water sizzles; brush with oil.
Using large spoon, ladle into pan and tilt around to cover.
Cook until lightly brown; loosen edges and flip over. Cook slightly then flip out onto a rack or wax paper.
Always oil pan before each crepe.
