Beverly's Red Beans and Rice
Beverly'S Red Beans And Rice is an easy dinner. Made with 1 2 lb. bag dried red kidney beans, 1 lb. hot sausage, 1 medium onion, smoky hollow sausage (1 of 3) and 1 can chopped tomatoes (or rotel if want some more spice), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash beans - cover with water and start to cook at a good boil.
(You don't have to use the whole 2 lb. bag, adjust to suit taste).
Add hot sausage and chopped onion.
Break sausage apart as it starts to cook.
Cook for about 20-30 minutes then add tomatoes with juice.
Continue cooking until beans just start to soften then add Smokey Hollow Sausage sliced.
Cook about 15-20 minutes more.
Serve over hot cooked rice.
