Beer Cheese Soup
Beer Cheese Soup is an moderately easy dinner. Made with 1 onion, finely diced, 1 stick butter, 2 oz. flour, 1 clove garlic, minced and 1/2 gal. beer (warm), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Sweat the onion in butter until tender.
Add the garlic and sweat briefly.
Add the flour, making a roux, stirring constantly for 5 minutes, until it's golden.
Add the beer and let simmer for 1/2 hour.
Add the cheese and let it melt in.
Add the cream and let the soup continue to warm, just to a simmer.
Do not let it boil.
Add the julienne peppers.
Add the dry mustard, Tabasco and Worcestershire sauce to taste.
Add salt and white pepper to taste.
Makes 8 servings.
