Beefy Mexicali Rice With Cheese(Makes 2 Servings) is an easy dinner. Made with 2 1/4 c. water, 1/2 lb. ground beef, 1 pkg. lipton rice and sauce (spanish), 1 (4 oz.) can green chilies, undrained and 1/2 c. shredded cheddar cheese (about 2 oz.), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In large skillet, bring water to boil.
Stir in remaining ingredients, except cheese, breaking the meat into small pieces. Salt and pepper to taste.
Reduce heat and simmer 12 minutes. Stir occasionally.
(Rice should be tender and most of liquid absorbed.)
Top with cheese.
Cover and let stand 2 minutes or until cheese is melted.
Serve.
