Beefy Jalapeño Cornbread
Beefy Jalapeño Cornbread is an moderately easy dinner. Made with 1 c. plus 1 tbsp. yellow cornmeal, 1 c. milk, 2 eggs, 3/4 tsp. salt and 1/2 c. bacon drippings, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine 1 cup cornmeal, milk, egg, salt, bacon drippings and corn in large bowl; mix.
Saute beef and onion; drain.
Sprinkle 1 tablespoon cornmeal in greased, preheated 12-inch iron skillet. Pour half of cornmeal mixture in skillet, then pour meat/onion mixture on top.
Grate Cheddar cheese on top of mixtures.
Pour remaining cornmeal mixture over top.
Bake 50 minutes at 350°. Crust will brown like cornbread.
