Beefy Jalapeño Cornbread is an moderately easy dinner. Made with 1 c. yellow corn meal, 1 c. milk, 2 eggs, beaten, 3/4 tsp. salt and 1/2 tsp. soda, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine corn meal, milk, eggs, salt, soda, oil and corn in a mixing bowl; blend well and set aside.
Pour half of corn meal batter into a greased 13 x 9 x 2-inch pan; sprinkle with cheese. Saute ground beef until lightly browned; drain thoroughly. Crumble beef over cheese and sprinkle with onion and peppers. Pour remaining corn meal over top.
Bake at 350° for 50 minutes. Yields 10 to 12 servings.
