Beef Stroganoff
Beef Stroganoff is an moderately easy dinner. Made with 3/4 lb. sirloin or flank steak, 2 tbsp. oil, 2 c. sliced mushrooms, 1 medium onion, sliced and 1 (13 3/4 oz.) can beef broth, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute beef quickly in hot oil in skillet.
Add mushrooms and onion; saute about 5 minutes.
Add broth, Worcestershire sauce and paprika.
Bring to a full boil.
Stir in rice.
Cover; remove from heat.
Let stand 5 minutes.
Stir in sour cream, catsup and tomatoes.
Sprinkle with chopped parsley, if desired.
Makes 4 servings.
