Beef Stew
Beef Stew is an moderately easy dinner. Made with 2 lb. beef stew meat, cut in 1 1/2-inch cubes, 2 medium onions, cut in eighths, 3 celery stalks, cut in 1-inch diagonals, 4 medium carrots, cut in half, crosswise and lengthwise and 3 c. tomato juice, this recipe delivers authentic, satisfying flavors. Put all ingredients, except potatoes, into a 3-quart casserole.
Bake, covered, at 300Β° for 2 1/2 hours.
Remove bay leaf and stir in potatoes.
Bake, covered, for additional 1 hour or until meat and vegetables are tender.
Yields 8 servings.
