Beef Soup
Beef Soup is an moderately easy dinner. Made with 2 to 2 1/2 lb. beef (chuck), 1 pkg. beef bones, 1 c. chopped celery, 1 c. chopped onion and 1 c. chopped carrots, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place meat and bones in pot; cover with water (approximately 8 to 10 cups).
Bring to a boil.
Skim off fat from top of soup. Add chopped celery, onion and carrots.
Smash tomatoes and add to pot.
Add salt to taste.
Add parsley.
Cover.
Boil on low temperature for 2 to 3 hours.
Add noodles or rice.
Cook for approximately 20 to 30 minutes longer.
