Beef Cheese Casserole is an moderately easy dinner. Made with 1 (16 oz.) pkg. penne pasta, 1 1/2 c. fresh sliced mushrooms, 2 tbsp. olive oil, 1 small onion, diced and 1 lb. ground beef, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°.
Spray large casserole dish.
Cook penne pasta according to package directions.
Heat oil in large pan over medium heat.
Add onion and garlic for 2 minutes.
Add mushrooms and ground beef.
Cook until beef is browned, about 8 to 10 minutes.
Stir in stewed tomatoes, juice, tomato sauce and basil; let simmer for 5 minutes.
Remove from heat; add pasta to saucepan.
Stir in cheese; mix well.
Spoon pasta in prepared casserole dish.
Sprinkle with Parmesan cheese.
Cover and bake 15 to 20 minutes.
