Bean Soup
Bean Soup is an moderately easy dinner. Made with 1 lb. dry navy beans, 1 meaty ham bone, 1 large onion, chopped, 2 celery stalks, chopped and 2 carrots, grated, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Wash beans.
Water, bring to boil.
Boil 2 minutes and remove from heat.
Let stand 1 hour.
Drain beans, add ham bone and 3 quarts to beans.
Simmer 1 1/2 to 2 hours. Remove bones broth and when cool enough to handle, trim meat from bones.
Add ham, onion, celery, carrots and seasonings.
Simmer for hour or until beans are done.
Add tomatoes.
Cook 10 to 15 minutes.
Just before serving add spinach leaves.
