Bay State Breakfast Muffins
Bay State Breakfast Muffins is an impressive dinner. Made with 2 c. shredded, unpeeled apples, 1 1/3 c. sugar, 1 c. chopped cranberries, 1 c. shredded carrots and 1 c. chopped walnuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix apples and sugar.
Set aside.
Grease muffin tin.
Preheat oven to 375Β°.
Add cranberries, carrots and nuts to apple mixture and stir gently to combine.
Mix dry ingredients and add to apple mixture.
Stir well.
Stir in eggs and oil and mix gently.
Divide among muffin cups.
Bake 25 minutes.
Cook for 5 minutes in pan and remove to wire rack.
Makes 12 muffins.
