Basque Stew
Basque Stew is an impressive dinner. Made with 1 lb. polish sausage, sliced in rounds 3/8-inch thick, 1/2 c. chopped onion, 2 (1 lb.) cans diced tomatoes, 4 potatoes (6 c.), pared and sliced and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
In large kettle, brown sausage over medium heat.
Add 2 cans tomatoes, sliced potatoes, celery, celery leaves, water, beef bouillon cubes, bay leaf, salt, thyme, pepper, oregano, basil and lemon juice.
Bring to a boil; reduce heat and simmer, uncovered, 40 minutes or until potatoes are tender.
