Barley Casserole
Barley Casserole is an moderately easy dinner. Made with 1/2 lb. sliced mushrooms, 4 tbsp. butter, 1 large onion, 1 c. barley (long cooking) and 2 c. chicken broth, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Saute onion and mushrooms in butter.
Add barley and brown. Add crushed garlic clove.
Pour into greased casserole.
Pour over this 1 cup of chicken broth.
Cover.
Bake at 350Β° for 30 minutes. Uncover.
Add second cup of chicken broth.
Sprinkle with almonds.
Bake until liquid is absorbed (approximately 1/2 hour).
