Barb'S Fresh Peach Pie is an moderately easy dinner. Made with 5 c. sliced peaches, 1/4 c. brown sugar, 1/2 c. granulated sugar, 1 to 2 tbsp. lemon juice and 3 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix the first 4 ingredients; let stand 1 hour.
Mix the cornstarch, cinnamon, nutmeg and salt.
Gradually pour syrup from peaches; cook until thick and clear.
Mix with peaches, stirring gently.
Place peach mixture on bottom crust of pie shell.
Roll top crust and place over peaches.
Bake in preheated 450° oven for 10 minutes.
Reduce oven temperature to 350° for 30 minutes. Best if sets to cool for awhile.
