Banana Split Muffins
Banana Split Muffins is an moderately easy dinner. Made with 2 c. packaged biscuit mix, 1/4 c. sugar, 2 egg yolks, beaten, 2/3 c. milk and 2 tbsp. shortening, melted, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine biscuit
1/4 cup sugar.
Combine egg yolks, milk and shortening.
Add the milk mixture all at once to the dry mixture, stirring just to moisten.
Place 1 1/2 tablespoons of batter in each of 12 cups of a greased muffin tin.
The banana into 12 cubes.
Place a banana cube, a cherry half a walnut half atop the batter in each cup. Cover a tablespoon more batter.
Beat egg whites until soft form. Gradually the 1/3 cup sugar, beating until stiff peaks form.
The coconut.
Place 1 1/2 tablespoons of this meringue on each muffin.
Top with remaining cherries.
Bake at 400Β° for 15 to 20 minutes.
Makes 12.
