Banana Gingersnaps
Banana Gingersnaps is an moderately easy dinner. Made with 1 extra ripe medium banana, 2 c. all-purpose flour, 3/4 tsp. ground ginger, 1/2 tsp. each: baking soda and salt and 1/4 c. margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Purée banana.
Combine flour, ginger, soda and salt.
Beat margarine and sugar until light and fluffy.
Beat in banana, molasses and lemon peel.
Beat in flour mixture.
Cover; refrigerate one hour.
Divide dough in half.
Roll each to 1/8-inch thickness.
Cut with 3-inch cookie cutter.
Place on cookie sheet sprayed with cooking spray.
Prick with fork. Sprinkle cinnamon and sugar over cookie tops.
Bake in 375° oven for 10 minutes and then cool
